The term “hotel” refers to the removal of fat and rib meat which exposes 3-4 inches of the bone creating an impressive cut to serve on any table as the natural shape and structure of the rack is eye-catching and easy to plate. The 8 ribs rack can be cut into individual ribs and served as an easily sharable "lollipop" appetizer. This lamb is 100% grass fed and raised in free roaming conditions (Free Range), without the use of antibiotics or added hormones.
